Mini pitta pizzas Recipe

  • 150g/5½oz tinned tomatoes, drained and chopped
  • salt and freshly ground black pepper
  • 3 mini-pitta breads
  • 55g/2oz Jarlsberg cheese, grated
  • 2 Polish Kabanos sausages, sliced
  • olive oil, for drizzling
  • small handful fresh basil, chopped, to serve
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Season the tomatoes with salt and freshly ground black pepper and spread over the pitta breads. Sprinkle over the cheese and sliced sausage.
  3. Drizzle each mini pizza with a little olive oil and place onto a non-stick baking sheet. Transfer to the oven and bake for 6-8 minutes, or until the cheese is melted and golden-brown.
  4. To serve, place the mini pizzas onto plates and sprinkle over the basil.
