Mini fry-up Recipe
- 2 tbsp olive oil
- ½ Portobello mushroom
- ½ red onion, sliced into thick rings
- ½ vine tomato
- 2 rashers smoked bacon
- 2 quails' eggs
- 2 slices white bread, toasted
- Heat the oil in a pan and fry the mushroom and red onion for 5-6 minutes, or until browned. In the same pan, fry the tomato half and the bacon for 3-4 minutes, or until the bacon is crisp, then add the quails' eggs and cook to your liking.
- Serve the mushrooms and onions on the toast, with the tomato, bacon and eggs on top.
