Mini fry-up Recipe

  • 2 tbsp olive oil
  • ½ Portobello mushroom
  • ½ red onion, sliced into thick rings
  • ½ vine tomato
  • 2 rashers smoked bacon
  • 2 quails' eggs
  • 2 slices white bread, toasted
  1. Heat the oil in a pan and fry the mushroom and red onion for 5-6 minutes, or until browned. In the same pan, fry the tomato half and the bacon for 3-4 minutes, or until the bacon is crisp, then add the quails' eggs and cook to your liking.
  2. Serve the mushrooms and onions on the toast, with the tomato, bacon and eggs on top.
