Microwave Mushroom Meatloaf Recipe

  • 1/2 pound extra-lean ground beef
  • 1 egg, beaten
  • 3 small button mushrooms, finely chopped
  • 2 tablespoons finely chopped onion
  • 6 whole-wheat crackers (such as Ritz®), crushed
  • 1/8 teaspoon seasoned salt
  • 2 tablespoons ketchup
  1. Mix ground beef, egg, mushrooms, onion, whole-wheat crackers, and salt together in a bowl. Mold into a ring on a microwave-safe dish. Spread ketchup on top. Cover with parchment paper.
  2. Cook in the microwave until beef is no longer pink in the center, 5 to 8 minutes. Drain off any fat. Cover and let sit for 5 minutes before serving.
