Mexican Strata Recipe

  • 1 (16 ounce) package Archer Farms™ chorizo sausage links
  • 3/4 cup frozen Market Pantry™ diced onions
  • 1 Archer Farms™ jalapeno cheddar focaccia, cut in 1 1/2-in cubes
  • 1 (8 ounce) package Market Pantry™ reduced-fat Mexican-style blend shredded cheese
  • 6 Market Pantry™ large eggs, lightly beaten
  • 2 1/2 cups Market Pantry™ whole milk
  • 2 teaspoons Market Pantry™ salt
  • 1/4 teaspoon Market Pantry™ black pepper
  1. Heat oven to 350 degrees F. Spray 13×9-inch glass baking dish with Market Pantry cooking spray.
  2. Remove chorizo from casings; discard casings. Crumble chorizo into large skillet. Cook over medium heat, stirring frequently until chorizo is cooked through, about 7 minutes. Stir in onion: cook an additional 2 minutes. Remove with slotted spoon to paper towel to drain.
  3. Place half of focaccia cubes in bottom of baking dish; top with chorizo mixture. Sprinkle with half of cheese. Top with remaining focaccia. Whisk eggs, milk, salt and pepper together in large bowl, pour over all. Gently press focaccia cubes down to soak with milk mixture.
  4. Bake 40 to 45 minutes or until puffed and set. Sprinkle remaining cheese over top bake an additional 3 minutes or until cheese melts.
