Melon soup Recipe

  • ½ Galia melon, seeds removed
  • 1 orange, juice only
  • 2 tbsp chopped fresh mint
  1. Scoop out the flesh from the melon, roughly chop and place into a food processor along with the orange juice and mint. Reserve the melon husk.
  2. Blend until smooth, then tip back into the melon husk and serve immediately.
