- 2 (6 ounce) cans Safeway SELECT Tongol Chunk Light Tuna in water, drained
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 4 tablespoons finely chopped red onion, divided
- 1/3 cup Safeway SELECT Italian Parmesan Herb Salad Dressing
- 2 tablespoons chopped fresh basil
- 1 clove garlic, minced
- 3 cups mixed salad greens
- 1 (2.25 ounce) can chopped black olives, drained
- 1/4 cup peeled, chopped and seeded cucumber
- 3 O Organics Large Eggs, hard-boiled and quartered
- 2 Roma tomatoes, each cut into 8 wedges
- Salt and freshly ground pepper
- In a medium bowl, break up tuna with a fork. Stir in beans and 3 tablespoons of the onion.
- In a 1-cup glass measure, stir together dressing, basil, and garlic. Pour over tuna and toss.
- Line four plates with lettuce. Spoon tuna into center of each plate. Add olives, cucumber, and onion evenly to each plate. Alternate egg and tomato around tuna on each plate. Add salt and pepper to taste. Serve with more dressing to taste.
