Mediterranean-style stuffed Portobello mushroom Recipe

  • 2 tbsp olive oil
  • 1 Portobello mushroom, cleaned, stalk removed
  • 55g/2oz Dolcelatte cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil
  • 25g/1oz butter, peeled, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp finely chopped onion
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Heat the olive oil in a small ovenproof frying pan and fry the mushroom for 1-2 minutes on both sides, or until golden-brown. Keep warm in the pan.
  3. In a small bowl, mash together the cheese, herbs, butter and garlic together until well combined, then use to stuff the mushroom. Sprinkle over the chopped onion and transfer the pan to the oven to roast for 5-6 minutes, or until the stuffing is bubbling and golden-brown.
  4. Transfer the stuffed mushroom onto a serving plate and serve immediately.
