Mediterranean Spinach Strata Recipe

  • 1 small onion, chopped
  • 1 small red bell pepper, chopped
  • 1 (5 ounce) bag fresh baby spinach
  • 1 (16 ounce) loaf Archer Farms™ French bread, cut into 1-inch chunks
  • 1 (8 ounce) package crumbled feta cheese
  • 2 cups milk
  • 5 eggs
  • 1 teaspoon Greek-style seasoning
  1. In skillet sprayed with cooking spray, cook onion and pepper for 5 minutes or until tender crisp. Add spinach and cook until just wilted.
  2. Layer half of bread cubes, spinach mixture, cheese and remaining bread in 9-inch round pan at least 2 inches deep.
  3. Whisk together remaining ingredients and pour over bread mixture; press bread till saturated.
  4. Bake at 350 degrees F for 1 hour 15 minutes or until center is set and puffed. Let cool 5 minutes, cut into wedges and serve.
