- 1 small onion, chopped
- 1 small red bell pepper, chopped
- 1 (5 ounce) bag fresh baby spinach
- 1 (16 ounce) loaf Archer Farms™ French bread, cut into 1-inch chunks
- 1 (8 ounce) package crumbled feta cheese
- 2 cups milk
- 5 eggs
- 1 teaspoon Greek-style seasoning
- In skillet sprayed with cooking spray, cook onion and pepper for 5 minutes or until tender crisp. Add spinach and cook until just wilted.
- Layer half of bread cubes, spinach mixture, cheese and remaining bread in 9-inch round pan at least 2 inches deep.
- Whisk together remaining ingredients and pour over bread mixture; press bread till saturated.
- Bake at 350 degrees F for 1 hour 15 minutes or until center is set and puffed. Let cool 5 minutes, cut into wedges and serve.
