Mashed Sweet Potatoes with Caramelized Onions Recipe

  • 2 pounds sweet potatoes
  • 1/4 cup Archer Farms™ caramelized onion burger topper
  • 4 tablespoons butter, cut into pieces
  • 3 tablespoons heavy whipping cream
  • 1 teaspoon kosher salt
  • 1/2 cup toasted pecans, chopped
  1. Place sweet potatoes in large saucepan with enough water to cover. Heat to boiling; reduce heat. Cover and simmer 20 to 25 minutes, or until fork tender; drain. When potatoes are cool enough to handle, slip off skins.
  2. Return potatoes to saucepan and mash. Stir in burger topper, butter, cream and salt.
  3. Spoon potatoes into serving dish; sprinkle with pecans.
