Mashed Potatoes with Cheddar, Chiles and Scallions Recipe

  • 1 cup shredded sharp Cheddar cheese (about ¼ pound)
  • 4 scallions (white and green parts), trimmed and thinly sliced
  • 1 canned chipotle chile, minced, plus 2 tablespoons of the adobo sauce
  • ¼ teaspoon chili powder
  • 1 recipe Your Basic Mashed Potatoes
  • ½ cup sour cream
  1. Mash half of the Cheddar, three quarters of the scallions, the chipotle chile, the adobo sauce, and the chili powder into the mashed potatoes. Serve with the sour cream and a sprinkling of the remaining Cheddar and scallions.
