- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 2 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 3/4 cup SPLENDA® No Calorie Sweetener, Granulated
- 1/4 cup vegetable oil
- 1 cup mashed banana
- 1 teaspoon vanilla extract
- 2 cups canned pumpkin
- 2 eggs
- 4 egg whites
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
- In a large bowl combine SPLENDA(R) Granulated Sweetener, oil and mashed banana. Blend in vanilla and pumpkin, then beat in eggs and egg whites one at a time. Gradually beat in flour mixture. Spread batter into prepared pan.
- Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
