- 1 (9 inch) unbaked pie shell
- 3 eggs, lightly beaten
- 1 cup packed brown sugar
- 1/2 cup quick cooking oats
- 1/2 cup chopped walnuts
- 1/2 cup evaporated milk
- 1/2 cup maple syrup
- 1/4 cup butter or margarine, melted
- 1 teaspoon vanilla or maple extract
- Pinch salt
- Combine eggs, brown sugar, oats, walnuts, evaporated milk, maple syrup, butter, vanilla extract, and salt in a medium bowl. Whisk together until well blended. Pour filling into pie shell.
- Bake in a preheated 350 degrees F (180 degrees C) oven until set, 35 to 40 minutes. Let cool, then chill before slicing.
