Maple-Coconut Rice Pudding Recipe

  • 2 cups cooked white rice
  • 1/3 cup unsweetened coconut
  • 1 1/4 cups skim milk
  • 1/4 cup maple syrup
  • 1 1/2 teaspoons ground cinnamon
  • 2 eggs
  1. Preheat oven to 325 degrees F (160 degrees C).
  2. Coat a 2-quart (2-litre) baking dish with nonstick spray, and add the rice and coconut.
  3. In a medium bowl, whisk the milk, maple syrup, cinnamon, and eggs, and pour over the rice. Stir to combine.
  4. Bake, uncovered, at 325 degrees F (160 degrees C) until set, 45 to 50 minutes.
