Mango Medley Recipe

  • 1 (11.5 fl oz) can Mango KERNS® from LIBBY'S® Refrigerated All Nectar
  • 3 tablespoons lime juice
  • 4 teaspoons granulated sugar
  • 1/4 teaspoon hot pepper sauce
  • 2 medium mangoes, peeled and cubed
  • 1 medium carrot, peeled and grated
  • 1/2 cup thinly sliced red bell pepper strips
  • 1/4 cup chopped fresh mint
  1. COMBINE nectar, lime juice, sugar and hot pepper sauce in small bowl.
  2. COMBINE mango, carrot, bell pepper and mint in medium bowl. Add nectar mixture; toss well to coat. Refrigerate for 1 hour before serving.
