Mandarin-Kiwi Parfaits Recipe

  • 2 cups nonfat lemon yogurt
  • 1 (11 ounce) can mandarin oranges, drained
  • 2 kiwifruit, peeled and sliced
  • 4 gingersnap cookies
  1. In each of 4 parfait glasses, alternately layer yogurt with oranges and kiwi. Cover with plastic wrap and refrigerate until ready to serve. Serve with a gingersnap.
