- 6 tablespoons butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 egg
- 2 egg whites
- 1/2 cup reduced fat peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon butter flavoring, optional
- 1 1/2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1/4 cup cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup miniature semisweet chocolate chips
- In a mixing bowl, beat butter and sugars until crumbly, about 2 minutes. Add the next five ingredients; mix well. Combine dry ingredients; gradually add to the creamed mixture. Stir in chips.
- Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325 degrees F for 12-14 minutes or until golden brown. Remove to wire racks to cool.
