- 1 mackerel fillet, cut in half
- salt and freshly ground black pepper
- 1 tbsp olive oil
- 1 slice ciabatta, griddled
- 1 bunch rocket
- 2 tsp sesame seeds
- 1 tbsp olive oil
- 2 tsp red wine vinegar
- salt and freshly ground black pepper
- Roll up each piece of mackerel and secure with a cocktail stick.
- Heat the olive oil in a small frying pan over a medium heat. Add the mackerel and fry for two minutes on each side, then remove from the pan and put onto a slice of griddled ciabatta.
- To make the rocket pesto, place all the ingredients into a food processor and blend until smooth.
- To serve, pour the rocket pesto over the mackerel rolls.
