Mackerel rolls with rocket pesto Recipe

  • 1 mackerel fillet, cut in half
  • salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 slice ciabatta, griddled
  • 1 bunch rocket
  • 2 tsp sesame seeds
  • 1 tbsp olive oil
  • 2 tsp red wine vinegar
  • salt and freshly ground black pepper
  1. Roll up each piece of mackerel and secure with a cocktail stick.
  2. Heat the olive oil in a small frying pan over a medium heat. Add the mackerel and fry for two minutes on each side, then remove from the pan and put onto a slice of griddled ciabatta.
  3. To make the rocket pesto, place all the ingredients into a food processor and blend until smooth.
  4. To serve, pour the rocket pesto over the mackerel rolls.
