- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups quick-cooking rolled oats
- 1/2 cup maraschino cherries, chopped
- 1/4 cup shredded coconut
- 1/2 cup canola oil
- 1 egg, beaten
- 1 1/4 cups 1% milk
- 1 teaspoon almond extract
- Preheat oven to 400 degrees F.
- In a bowl, sift together flour, sugar, baking powder, cinnamon and salt. Add rolled oats, cherries and coconut; mix thoroughly.
- Add canola oil, beaten egg, milk and almond extract. Stir until well blended.
- Drop by the teaspoon full on an ungreased sheet. Bake 10 to 12 minutes.
