Lychee and lime syrup Recipe

  • 150g/5½oz caster sugar
  • 50ml/2fl oz water
  • 150g/5½oz fresh lychees, peeled
  • ½ lime, juice and zest only
  1. Place the sugar and water in a small saucepan over a medium heat. Once the sugar has dissolved remove from the heat.
  2. Place the lychees, lime juice and lime zest into a bowl and mix together.
  3. Add the sugar syrup to the bowl of lychees and lime and mix together.
  4. Serve in a bowl.
