- 150g/5½oz caster sugar
- 50ml/2fl oz water
- 150g/5½oz fresh lychees, peeled
- ½ lime, juice and zest only
- Place the sugar and water in a small saucepan over a medium heat. Once the sugar has dissolved remove from the heat.
- Place the lychees, lime juice and lime zest into a bowl and mix together.
- Add the sugar syrup to the bowl of lychees and lime and mix together.
- Serve in a bowl.
