Loaded Baked Potato with BBQ Chicken Recipe

  • 2 large baking potatoes, cooked
  • 2 cups Safeway Signature Cafe roasted chicken
  • 1/4 cup Safeway BBQ Sauce, Original, Honey Mustard, Honey Smoke or Hickory Smoked
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Garlic powder to taste
  • Garnish Potato with the following items, about 1 tablespoon for each potato:
  • Cheddar cheese, shredded
  • sour cream
  • green onions or chives
  1. Bake potatoes (45 minutes) or microwave (5 minutes) until tender. Let cool enough to handle
  2. In a bowl, shred cooked chicken meat with a fork and add BBQ sauce, add to pan and heat until hot.
  3. Lay the potato down long ways and cut the top piece of skin off and start to mash the potato with a fork. Add butter, salt, pepper, and a pinch of garlic powder and mash until the potato is creamy. Try to avoid breaking apart the skin.
  4. Mash down the potato to make room for chicken, evenly divide meat between the 2 potatoes. Add cheese to top of each potato and either bake for 10 minutes, or broil for 5 minutes to melt and brown cheese.
  5. Top with sour cream, green onions/chives, and some more shredded cheddar.
