Lemon Broccoli Fish Recipe

  • 1 pound sole fillets
  • 2 tablespoons lemon juice
  • ground black pepper
  • 1 (10 ounce) package frozen broccoli spears, thawed
  • 1/4 pound (4 oz.) VELVEETA LIGHT Pasteurized Process Cheese Product, cut up
  • 1/4 cup skim milk
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon dill weed
  1. Sprinkle each fillet with juice and pepper. Arrange broccoli spears on narrow end of each fish fillet; roll up. Secure with toothpicks. Place, seam-side down, in 10×6-inch microwavable baking dish; cover.
  2. Microwave on HIGH 5 to 7 minutes or until fish flakes easily with fork.
  3. Microwave remaining ingredients in small microwavable bowl 2 to 3 minutes or until sauce is smooth, stirring after each minute. Remove toothpicks before serving. Serve with sauce.
