- 4 bone-in chicken breast halves
- 2 tablespoons Market Pantry™ Butter, softened
- 2 cloves garlic, finely chopped
- 2 teaspoons finely chopped fresh parsley
- 2 teaspoons fresh thyme leaves, finely chopped
- 2 teaspoons grated lemon peel
- 1/8 teaspoon pepper
- 1/4 teaspoon salt
- Heat oven to 400 degrees F. With fingers, loosen skin on chicken without removing it.
- Stir butter, garlic, parsley, thyme and lemon peel together in a small bowl. Spread one quarter of the butter mixture under the skin of each breast. Place chicken on a 15x10x1 inch jellyroll pan.
- Bake 20 to 25 minutes or until internal temperature reaches 170 degrees F.
