- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 (1 ounce) package Lawry's® Taco Spices & Seasonings
- 1 (28 ounce) can diced tomatoes in juice
- 1 (4 ounce) can diced green chiles (optional)
- 6 ounces plain tortilla chips
- 4 cups shredded Monterey Jack cheese
- 1 cup sour cream
- 1/2 cup shredded Cheddar cheese
- In large skillet, heat oil over medium high heat. Add onion and cook until tender. Add Taco Spices & Seasonings, tomatoes and chiles; mix well. Bring to a boil; reduce heat to low and cook, uncovered, 5 minutes, stirring occasionally.
- Spray a 2-quart casserole dish with nonstick cooking spray; arrange 1/2 of tortilla chips, sauce and Monterey Jack cheese. Repeat layers, top with sour cream. Bake in 350 degrees F oven for 25 minutes. Sprinkle with cheddar cheese and bake 5 minutes longer. Let stand 10 minutes before serving.
