- 2 cups Keebler® Grahams Cinnamon Crisp® Graham Crackers (finely crushed)
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg, beaten
- 1 cup low-fat plain yogurt
- 1/4 cup vegetable oil
- 1 cup peeled, chopped apple
- In large bowl stir together crackers, flour, sugar, baking powder and baking soda.
- In small bowl combine egg, yogurt and oil. Add to cracker mixture. Stir until just combined. Fold in apple.
- Spoon into 12 greased or lined muffin cups, filling each about 2/3 full. Bake at 400 degrees F for 20 to 25 minutes or until toothpick inserted near center comes out clean. Cool in pan on wire rack for 5 minutes. Remove from muffin cups.
