Kahlua Cookies with Chocolate Chunks Recipe

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 7 tablespoons margarine or butter, softened
  • 2 eggs
  • 1/4 cup Kahlua
  • 3 tablespoons instant espresso
  • 1 tablespoon ground coffee beans
  • 1 cup bittersweet chocolate chunks or chocolate chips
  1. Preheat oven to 375 degrees. Line cookie sheets with parchment.
  2. Combine flour, baking soda, salt and sugars. Make a well in the center of dry ingredients and add softened butter, eggs, Kahlua, instant espresso, ground coffee and chocolate chunks. Mix well to combine all ingredients into cookie dough.
  3. Using a small scoop or a heaping tablespoon, drop cookie dough 2 inches apart on prepared cookie sheets.
  4. Bake cookies in batches 9 to 11 minutes. Transfer to wire rack to cool.
