Kadin Buddu Kofta (Turkish Meatballs) Recipe

  • 1 1/4 pounds ground lamb
  • 1/2 cup cooked rice
  • 1 tablespoon salt
  • 2 teaspoons garam masala
  • 1 teaspoon ground black pepper
  • 1 tablespoon chopped fresh dill
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 cup oil, or more as needed
  1. Combine ground lamb, cooked rice, salt, garam masala, and ground black pepper in a bowl. Transfer mixture to a food processor and pulse until combined, 1 to 2 times. Stir dill into the mixture.
  2. Shape mixture into 10 meatballs about 2 inches in diameter.
  3. Beat egg in a small bowl. Pour flour onto a shallow dish. Dip meatballs in the beaten egg; dredge in flour.
  4. Heat oil in a large skillet. Cook meatballs until golden on all sides, about 10 minutes.
