Jicama Salad with Ginger Lime Dressing Recipe

  • Dressing:
  • 3 tablespoons olive oil
  • 1 lime, zested and juiced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • salt to taste
  • 2 jicama, peeled and cut into matchsticks
  • 2 cups carrots, shaved into strips using a vegetable peeler
  • 1 cup fresh pea shoots
  • 1 avocado – peeled, pitted, and sliced
  • 1/2 cup cooked quinoa
  • 1 tablespoon chopped fresh cilantro, or to taste
  1. Beat olive oil, lime juice, lime zest, ginger, honey, sesame oil, and salt together in a bowl with a hand mixer until dressing is thick and creamy.
  2. Stir jicama, carrots, pea shoots, avocado, quinoa, and cilantro together in a large bowl; pour dressing over the top and toss to coat.
