- 1/4 cup orange juice
- 2 tablespoons smoked chili oil
- 1 teaspoon Safeway SELECT Dijon Mustard
- 1 teaspoon grated orange peel
- 6 cups thin slivers rinsed and crisped romaine lettuce
- 1 cup thin slivers jicama
- 1 medium-size firm-ripe avocado, peeled, pitted, and sliced
- Salt
- In a small bowl, whisk together orange juice, oil, mustard, and orange peel. Set aside.
- Arrange lettuce in a large bowl. Top with jicama and avocado slices.
- Pour dressing over salad. Mix gently and add salt to taste.
