Japanese Scrambled Eggs with Pacific Saury Recipe

  • 1/2 cup water
  • 1 (5 ounce) can grilled Pacific saury
  • 1 tablespoon mirin (sweet cooking rice wine)
  • 1 tablespoon soy sauce, or more to taste
  • 2 eggs, beaten
  • 2 tablespoons chopped scallion
  1. Bring water to the boil in a skillet. Add saury, mirin, and soy sauce. Return to a boil and slowly pour in beaten eggs, mixing well. Cook eggs until firm and set, 2 to 3 minutes; garnish with scallion.
