Italian Cupboard Soup Recipe

  • 1 pound country style half ham, cubed
  • 1 (14.5 ounce) can petite roasted garlic and onion diced tomatoes, undrained
  • 2 (14.5 ounce) cans chicken broth
  • 2 tablespoons dried minced onion
  • 1 (15 ounce) can cannelloni or great northern beans, drained
  • 8 ounces fresh spinach leaves, torn
  • 1/4 cup shredded mozzarella cheese
  1. In a deep saucepan, brown the pork in a little olive oil until internal temperature reaches 160 degrees F; add all ingredients except spinach; bring to a boil, lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 minutes more. Top serving with shredded cheese.
