Hot Chicken Salad IV Recipe

  • 2 cups chopped, cooked chicken meat
  • 2 cups chopped celery
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 3 tablespoons pimento, chopped
  • 1 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1/2 cup mayonnaise
  • 1 pound Cheddar cheese, shredded
  • 3 cups crushed potato chips
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl blend together the chicken, celery, bell pepper, onion, pimento, salt, lemon juice and mayonnaise. Spread mixture into the bottom of a lightly greased 9×13 inch baking dish, sprinkle with cheese and top with potato chip crumbs.
  3. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cheese is melted and casserole is bubbly.
