Hopping John Recipe

  • 2 cups dry black eye peas
  • water
  • 1 ham hock, meat cut from bone
  • 2 cups chopped onions
  • 1 teaspoon red pepper flakes
  • 2 cups long grain rice, uncooked
  • 1/2 cup CLAUSSEN Pickle Relish
  • 5 KRAFT Singles
  1. Place peas in large pot. Add enough water to cover peas by 2 inches. Bring to boil; boil 2 minutes. Remove from heat. Let stand 1 hour.
  2. Add ham meat and bone, onions and pepper flakes to peas. Add enough water to cover peas and meat by 2 inches; cover. Cook on medium heat about 30 minutes or until peas are tender. Add additional water if necessary to keep the peas juicy.
  3. Stir in rice; let simmer 20 minutes or until rice is tender. Stir in the pickle relish and Singles.
