- 1 tbsp olive oil
- ¼ red onion, finely sliced
- 1 garlic clove, chopped
- 1 tsp soft brown sugar
- 2 tsp balsamic vinegar
- 1 fig, halved
- 1 tbsp clear honey
- 2 slices baguette, toasted
- Preheat the oven to 200C/400F/Gas 6.
- Heat the olive oil in a pan, add the red onion and fry over a gentle heat for five minutes until softened.
- Add the garlic and sugar and cook for 1-2 minutes. Add the balsamic vinegar and cook for three minutes.
- Place the halved fig onto a baking sheet and drizzle with honey. Roast for five minutes in the oven.
- To serve, spread the caramelised onions onto the toasted baguette slices and top with the honey-roasted figs.
