- Turkey Mixture:
- 1 pound smoked turkey, cubed
- 1/2 cup red wine
- 1/4 cup Spice Islands® Cilantro
- 1 tablespoon Spice Islands® Ground Coriander
- 1 tablespoon Spice Islands® Cumin
- 1/2 teaspoon Spice Islands® Medium Grind Black Pepper
- 1 medium lime
- Chili Mixture:
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 medium green bell pepper, diced
- 1 jalapeno pepper, minced
- 1 tablespoon minced garlic
- 2 (15 ounce) cans black beans, undrained
- 1 (15.5 ounce) can light kidney beans, undrained
- Combine turkey, wine, cilantro, coriander, cumin and black pepper in a medium sized bowl. Squeeze lime and add juice to turkey mixture. Marinate 10 minutes.
- Heat olive oil in a large pot on medium heat. Add onion, peppers and garlic. Saute until vegetables are softened. Stir in beans. Cook until chili begins to simmer. Add turkey mixture, and simmer 1 to 2 hours stirring occasionally.
