Hollywood Shrimp Bruschetta Recipe

  • 16 (1/4 inch thick) slices Archer Farms™ French baguette
  • 1 cup frozen fully-cooked bay shrimp, thawed and drained
  • 1 roma (plum) tomato, chopped
  • 2 green onions, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon refrigerated pesto
  1. Set oven control to broil. Brush bread slices with olive oil and arrange in single layer on baking sheet.
  2. Broil until bread is toasted.
  3. Stir remaining ingredients together. Season to taste with salt and pepper, if you like. Spoon into serving bowl.
  4. Let your guests help themselves by spooning shrimp onto toast slices.
