- 3/4 cup reduced-sodium chicken broth
- 2 scallions, sliced
- 2 tablespoons chopped fresh parsley
- 1/2 cup whole-wheat couscous
- Bring broth, scallions and parsley to a boil in a small saucepan. Add couscous, return to a simmer, cover and remove from the heat. Let stand, covered, 5 minutes. Fluff with a fork before serving.
