- 1 pound chevre (fresh goat cheese), at room temperature
- 1 tablespoon lemon juice
- 1/4 cup minced shallots
- 1/4 cup minced fresh flat-leaf parsley
- 2 teaspoons minced O Organics Fresh Rosemary leaves
- 2 teaspoons minced O Organics Fresh Thyme leaves
- Salt and freshly ground pepper
- Fresh chives for garnish
- 1 1/2 pounds mixed trimmed vegetables, such as baby carrots, endive leaves, lightly steamed asparagus, and strips of bell pepper
- Assorted Safeway SELECT and O Organics Crackers
- In a bowl, stir together chevre and lemon juice. Mix in shallots, parsley, rosemary, thyme, and salt and pepper to taste.
- Cover tightly with plastic wrap and chill up to 3 days.
- Four hours ahead, prepare vegetables. At least 2 hours ahead, remove spread from refrigerator.
- Spoon spread into a serving bowl and garnish with fresh chives, snipped and whole.
- Arrange vegetables and crackers on a platter. Nest bowl of cheese spread in center and serve.
