Herbed Goat Cheese Spread with Crudites Recipe

  • 1 pound chevre (fresh goat cheese), at room temperature
  • 1 tablespoon lemon juice
  • 1/4 cup minced shallots
  • 1/4 cup minced fresh flat-leaf parsley
  • 2 teaspoons minced O Organics Fresh Rosemary leaves
  • 2 teaspoons minced O Organics Fresh Thyme leaves
  • Salt and freshly ground pepper
  • Fresh chives for garnish
  • 1 1/2 pounds mixed trimmed vegetables, such as baby carrots, endive leaves, lightly steamed asparagus, and strips of bell pepper
  • Assorted Safeway SELECT and O Organics Crackers
  1. In a bowl, stir together chevre and lemon juice. Mix in shallots, parsley, rosemary, thyme, and salt and pepper to taste.
  2. Cover tightly with plastic wrap and chill up to 3 days.
  3. Four hours ahead, prepare vegetables. At least 2 hours ahead, remove spread from refrigerator.
  4. Spoon spread into a serving bowl and garnish with fresh chives, snipped and whole.
  5. Arrange vegetables and crackers on a platter. Nest bowl of cheese spread in center and serve.
