Healthy Heart Tabbouleh Salad Recipe

  • 3/4 cup bulgur wheat
  • 2 bunches fresh parsley, chopped
  • 2 cucumbers, peeled and chopped
  • 1/2 cup chopped green onions
  • 30 cherry tomatoes, halved
  • 1/2 cup chopped fresh mint leaves
  • 1 cup diced red bell pepper
  • 2 lemons, juiced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  1. Soak bulgur in warm water for 30 minutes, drain, and squeeze dry. Place in a salad bowl and mix in the parsley, cucumbers, onions, tomatoes, mint, pepper, lemon juice, and garlic. Add the oil and toss. Cover and refrigerate.
