- 3/4 cup bulgur wheat
- 2 bunches fresh parsley, chopped
- 2 cucumbers, peeled and chopped
- 1/2 cup chopped green onions
- 30 cherry tomatoes, halved
- 1/2 cup chopped fresh mint leaves
- 1 cup diced red bell pepper
- 2 lemons, juiced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Soak bulgur in warm water for 30 minutes, drain, and squeeze dry. Place in a salad bowl and mix in the parsley, cucumbers, onions, tomatoes, mint, pepper, lemon juice, and garlic. Add the oil and toss. Cover and refrigerate.
