Hash, Cuban-Style Recipe

  • 1 pound uncooked ground turkey breast
  • ½ pound uncooked ground lean beef
  • 1 tablespoon olive oil
  • ½ cup diced onion
  • ½ large green bell pepper, seeded, cored, and diced
  • 2 garlic cloves, minced
  • ¼ teaspoon ground cayenne pepper
  • 1 cup tomato sauce
  • ¼ teaspoon ground cumin
  • ¼ cup capers, drained
  • Freshly ground black pepper to taste
  • 2 cups cooked long-grain white rice
  • Baked Plantain
  1. In a large bowl, thoroughly mix ground turkey with lean ground beef; set aside.
  2. In a large skillet, heat oil over medium heat; saute onion until translucent.
  3. Add bell pepper, garlic, and cayenne pepper; simmer over medium heat for 3 to 5 minutes.
  4. Add meat; stir constantly; keep ground meat separated into small pieces.
  5. When meat is browned, add tomato sauce, cumin, and capers; lower heat and simmer for another 8 minutes; add pepper to taste.
  6. Serve each portion over ½ cup of cooked rice with Baked Plantain .
  7. If necessary, season with half salt, half salt-substitute mixture from your shaker at table.
