Hash, Cuban-Style Recipe
- 1 pound uncooked ground turkey breast
- ½ pound uncooked ground lean beef
- 1 tablespoon olive oil
- ½ cup diced onion
- ½ large green bell pepper, seeded, cored, and diced
- 2 garlic cloves, minced
- ¼ teaspoon ground cayenne pepper
- 1 cup tomato sauce
- ¼ teaspoon ground cumin
- ¼ cup capers, drained
- Freshly ground black pepper to taste
- 2 cups cooked long-grain white rice
- Baked Plantain
- In a large bowl, thoroughly mix ground turkey with lean ground beef; set aside.
- In a large skillet, heat oil over medium heat; saute onion until translucent.
- Add bell pepper, garlic, and cayenne pepper; simmer over medium heat for 3 to 5 minutes.
- Add meat; stir constantly; keep ground meat separated into small pieces.
- When meat is browned, add tomato sauce, cumin, and capers; lower heat and simmer for another 8 minutes; add pepper to taste.
- Serve each portion over ½ cup of cooked rice with Baked Plantain .
- If necessary, season with half salt, half salt-substitute mixture from your shaker at table.
