- 50g/1¾oz halibut, thinly sliced
- ½ lime, juice only
- ½ lemon, juice only
- salt and freshly ground black pepper
- ½ lime, cut into wedges to garnish
- fresh flatleaf parsley leaf, to garnish
- Place the halibut slices in the centre of a plate and pour over the lemon and lime juice. Season well with salt and freshly ground black pepper, then leave to 'cure' for 15-20 minutes.
- To serve, garnish the plate with lime wedges and the fresh parsley leaf.
