Halibut ceviche Recipe

  • 50g/1¾oz halibut, thinly sliced
  • ½ lime, juice only
  • ½ lemon, juice only
  • salt and freshly ground black pepper
  • ½ lime, cut into wedges to garnish
  • fresh flatleaf parsley leaf, to garnish
  1. Place the halibut slices in the centre of a plate and pour over the lemon and lime juice. Season well with salt and freshly ground black pepper, then leave to 'cure' for 15-20 minutes.
  2. To serve, garnish the plate with lime wedges and the fresh parsley leaf.
