Ground Beef Tacos Recipe

  • 1 pound ground beef
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon cornstarch
  • 1/2 cup water
  • 6 small whole wheat tortillas
  • 1 1/2 cups shredded Monterey Jack cheese
  • 6 tablespoons sour cream
  • 6 tablespoons black bean and corn salsa
  1. Heat a large skillet over medium-high heat. Saute ground beef and onion in the hot skillet, breaking beef into small pieces, until beef is completely browned, 7 to 10 minutes.
  2. Stir garlic into the beef mixture and cook until fragrant, about 1 minute; season with paprika, chili powder, cumin, cayenne pepper, oregano, and salt. Sprinkle cornstarch over the beef mixture. Pour water over the beef mixture and stir.
  3. Bring mixture to a simmer and cook until moisture absorbs into the meat, about 5 minutes.
  4. Spoon beef mixture into each tortilla. Top each portion of beef with 2 tablespoons Monterey Jack cheese, 1 tablespoon sour cream, and 1 tablespoon salsa.
