- dash olive oil
- ½ onion, finely sliced
- 85g/3oz butter
- 75ml/2½fl oz white wine
- 100ml/3½fl oz hot chicken stock
- ½ fresh red chilli, chopped
- 3 boerewors (South African) sausages, or other spiced sausages, grilled, to serve
- Heat the olive oil in a frying pan, add the onion and fry until softened but not coloured.
- Add the butter, white wine, stock and chilli and simmer for five minutes.
- To serve, place the grilled sausages onto a serving plate and pour over the onion sauce.
