Grilled Pork and Vegetable Packets Recipe

  • 1 (1 pound) pork tenderloin, sliced into 1/4 inch thick slices
  • 2 red bell peppers, seeded and diced
  • 1 large onion, coarsely chopped
  • 1 large zucchini, coarsely chopped
  • 1 pint cherry tomatoes
  • 3 cloves garlic, pressed
  • 1/4 cup olive oil
  • 3/4 cup steak sauce
  • salt
  • freshly ground black pepper
  1. Preheat an outdoor grill for medium high heat and lightly oil grate.
  2. In a medium bowl, mix together pork, bell pepper, onion, zucchini, tomatoes and garlic. Stir in oil and steak sauce. Season with salt and pepper; toss to coat.
  3. Divide mixture evenly among four 18-inch square pieces of heavy-duty foil. Fold edges of foil to seal the packet well.
  4. Place packets on hot grill and cook for 20 minutes, or until vegetables are tender. (Note: Be careful when opening foil packet as the steam that escapes will be very hot.)
