Grilled Oysters Recipe

  • 10 to 12 oysters per person
  1. Grill with charcoal and hickory or oak.
  2. Wash and clean the oyster shells thoroughly. Keep the oysters on ice until ready to cook.
  3. Prepare a hickory or oak fire with a lot of kindling.
  4. Set a large rack over the fire.
  5. When the coals are a dusty red glow, place the oysters on the rack and cook.
  6. As the oysters open, remove with long tongs. Pry open with a knife and eat immediately.
  7. The oysters will have a pungent, smoky flavor.
