Grilled Lamb Chops with Mustard Recipe

  • 1 tbsp (15 mL) whole grain mustard
  • 1 tsp (15 mL) Dijon mustard
  • 1 tbsp (15 mL) olive oil
  • ½ tsp (2 mL) dried thyme
  • ½ tsp (2 mL) crumbled dried rosemary
  • ¼ tsp (1 mL) black pepper
  • 4 lamb chops, 1 inch (2.5 cm) thick (about 1 ¼ lbs [625 g])
  • Salt to taste
  • 1 tbsp (15 mL) lemon juice
  • Few sprigs fresh parsley, chopped
  • 2 green onions, finely chopped
  1. Preheat grill or broiler
  2. In a small bowl, stir together the mustards, olive oil, thyme, rosemary and black pepper until smooth. Generously brush both sides of the chops with this mixture and let rest at room temperature for about 30 minutes.
  3. Grill or broil lamb chops to your preference (3 to 4 minutes each side for medium rare). Sprinkle salt and lemon juice on the chops. Serve immediately, garnished with chopped parsley and green onions.
