- 1 (19 ounce) package Bob Evans Farms® Bratwurst
- 2 pounds Bob Evans® Fresh Home Fries Diced
- 3/4 cup red wine vinegar
- 1/4 cup vegetable oil
- 1 small onion, diced
- 1 small cucumber, thinly sliced
- 2 tablespoons chopped chives
- 2 teaspoons Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 dashes hot pepper sauce
- Add bratwurst and potatoes to 4 quarts boiling water. Cook for 10 minutes, and then remove bratwurst. Continue cooking potatoes until tender, about 10 additional minutes. Meanwhile, cook bratwurst in a skillet over medium heat until browned and cooked through, about 6 minutes. Thinly slice bratwurst. In a large serving bowl, combine vinegar, oil, onion, cucumber, chives, mustard, garlic, salt, pepper and hot sauce. Gently stir in potatoes and bratwurst. Serve warm or cold. Refrigerate leftovers.
