- 1 tbsp vegetable oil
- 1 pack of 15cm/6in flour tortillas
- 1 tin refried beans
- 1 smoked sausage, chopped
- BBQ flavouring
- 1 ripe avocado
- soured cream
- 1 tbsp lemon juice
- 400g/14oz grated cheese (cheddar, Monterey jack, mozzarrella)
- 1 punnet cherry tomatoes
- salt and pepper
- sprigs of coriander
- Mash avocado with lemon juice, add 1 tbsp of soured cream, and season to taste.
- Heat the beans with the sausage, and add the BBQ flavouring.
- Brush two tortillas with oil, and mark crossways on a griddle pan.
- Cover one tortilla with the beans and cheese and add the avocado mixture to the other tortilla, press both together.
- Cook in preheated oven 200C/400F/Gas 6 for about 5 minutes, until the cheese melts and binds it together.
- Allow to cool slightly then cut into triangles from the centre like a pizza.
- Garnish with cherry tomatoes, dollop of soured cream and coriander sprigs.
- Serve on slates or tiles.
