Griddled lamb with eggy mash Recipe

  • ½ sweet potato
  • 3 tbsp double cream
  • 1 tbsp chives, chopped
  • 2 eggs
  • 2 tbsp olive oil
  • 1 lamb chump steak
  • salt and freshly ground black pepper
  1. To make the mash, peel and dice the sweet potato.
  2. Boil until tender and drain.
  3. Mash the sweet potato, mash in the cream and chives and season.
  4. Boil the eggs for five to six minutes.
  5. Peel and cut the eggs into quarters.
  6. Drizzle oil over the lamb and season.
  7. Griddle in a hot pan for two minutes either side.
  8. Cut the steak into two pieces and serve on the mash with the egg.
