Green beans with spring onions and parsley butter Recipe

  • 150g/5½oz green beans, trimmed
  • 25g/1oz butter
  • 3 spring onions, sliced
  • salt and freshly ground black pepper
  • 1 tbsp honey
  • 2 tbsp chopped fresh parsley
  1. Cook the beans in a saucepan of boiling, salted water for 3-4 minutes, or until they have softened slightly but are not cooked through, then drain.
  2. Melt the butter in a frying pan until foaming, then add the beans, sliced spring onions, and salt and pepper. Cook for 2-3 minutes.
  3. Drizzle the vegetables with the honey and stir in the parsley, then serve.
