Green Bean and Bell Pepper Salad Recipe

  • 8 ounces green beans
  • 1/2 red bell pepper, julienne
  • 1/2 cup red onion slices
  • 1 tablespoon balsamic vinegar
  • 1/4 cup Carb Well Italian Dressing
  1. Remove stem, seeds and membrane from the red bell pepper. Finely julienne. Slice the red onion into thin slivers. In a large Tupperware bowl, toss with the balsamic vinegar.
  2. Trim green beans and blanch them by dropping them into boil water for 2 minutes. Drain and toss them in with the onions and peppers. Let the vegetables marinate for 1 hour in the refrigerator. Toss them a couple of times if you remember.
  3. When ready to serve, toss in the Carb Well Italian Dressing.
